Makes 10 small fritters
Shopping List
- 1/2 cup all purpose flour
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/4 cup milk
- 1-2 tablespoons sugar (optional)
- 1 large egg, light beaten - See Springdell Farm for fresh eggs
- 2 cups fresh corn kernels cut off 2 large cobs - See one of our farms for fresh corn
- Vegetable or olive oil for frying
- Maple syrup for serving
Make It
- In a large bowl, sift together the flour, baking powder, and salt.
- Add the milk and sugar (if using). Whisk until smooth.
- Beat in the egg. Add corn and gently mix.
- In a large skillet, heat about 2 tablespoons oil of medium-high heat.
- Drop 2-3 tablespoons of batter into the heated oil. Carefully flatten the mixture with the back of a spatula to form a fritter.
- Cook for 2-3 minutes per side or until golden brown. Repeat with remaining batter.
- Serve hot with maple syrup and/or a dollop of butter.
Note about sugar: If your corn is fresh and sweet you will not need to add sugar. Frozen corn may require the addition of sugar.
