Corn Fritter

Makes 10 small fritters

Shopping List

  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup milk
  • 1-2 tablespoons sugar (optional)
  • 1 large egg, light beaten - See Springdell Farm for fresh eggs
  • 2 cups fresh corn kernels cut off 2 large cobs - See one of our farms for fresh corn
  • Vegetable or olive oil for frying
  • Maple syrup for serving

Make It

  1. In a large bowl, sift together the flour, baking powder, and salt.
  2. Add the milk and sugar (if using). Whisk until smooth.
  3. Beat in the egg. Add corn and gently mix.
  4. In a large skillet, heat about 2 tablespoons oil of medium-high heat.
  5. Drop 2-3 tablespoons of batter into the heated oil. Carefully flatten the mixture with the back of a spatula to form a fritter.
  6. Cook for 2-3 minutes per side or until golden brown. Repeat with remaining batter.
  7. Serve hot with maple syrup and/or a dollop of butter.

Note about sugar: If your corn is fresh and sweet you will not need to add sugar. Frozen corn may require the addition of sugar.
